LEONA'S GLORIOUS MUFFINS 
2 c. flour
1 1/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. carrots, shredded
1 1/2 c. apples, shredded
3/4 c. coconut
1/2 c. dates, chopped
1/2 c. walnut or pecans, chopped
3 eggs, well beaten
1 c. vegetable oil
1/2 tsp. vanilla

Preheat oven to 350 degrees. Combine dry ingredients. In another bowl combine carrots, apples, coconut, dates and nuts. Stir in eggs, oil and vanilla. Stir in dry ingredients. Pour into 24 paper lined muffin tins, filling almost to the top. Bake 18 to 20 or 24 minutes.
