BAKED SHOESTRING POTATOES 
4 baking potatoes, pared and sliced as for French fried
1 1/2 tsp. salt
Dash of pepper
2 tbsp. chopped parsley
1/2 c. grated cheddar cheese (more may be added)
1/2 c. light cream
3 tbsp. melted butter

Place potatoes in a greased casserole. Sprinkle on salt, pepper, parsley, and cheese. Pour cream over the top. Pour butter over the top. Bake uncovered at 450 degrees for 1 hour. Be careful not to burn the top, you may need to cover with foil toward the end. Serves 4-6.
