BEAN AND BACON BAKE 
4 lg. potatoes, peeled and parboiled
1/2 c. butter, melted
1 med. onion, sliced
2 firm tomatoes, sliced
1 (15 oz.) can kidney beans
Salt and pepper to taste
1 c. shredded cheddar or Mozzarella cheese
12 slices bacon, crisply fried and crumbled

Slice potatoes and dip slices in melted butter to coat. Place in a casserole dish. Layer onion, tomato slices and kidney beans with some of the canning liquid. Add salt and pepper to taste. Sprinkle with cheese and bacon. Cover with foil and bake at 350 degrees for 1 hour.
