1 c. granulated sugar 1 c. dark or light brown sugar 2 tsp. baking powder 2 1/2 c. all-purpose flour 2 tsp. cinnamon 2 c. chopped almonds 2 eggs 1/3 c. oil In a large bowl combine sugar, baking powder, flour, cinnamon and chopped almonds. Add beaten eggs and oil. Mix thoroughly until well blended. Separate dough into 4 pieces. Using one piece at a time, roll out onto a floured counter to about 1/4-inch thickness. Fold into thirds to form a loaf. Place loaf on a lightly greased cookie sheet at least 6 inches apart. Bake at 350 degrees for 20-30 minutes. Remove from heat. Brush with beaten egg while still warm. Cool and slice on an angle. Each loaf yields about 1 dozen cookies. |
