SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes, drained
1 c. sugar
2 eggs, beaten
1/3 c. butter
1 tsp. vanilla

Mix all ingredients and place in baking dish.

TOPPING:

1 c. coconut
1 c. brown sugar
1/2 c. butter
1 c. chopped pecans
1/3 c. flour

Mix and place over potato mixture. Bake at 350 degrees for 30 to 35 minutes.
