BEAN SOUP | |
2-3 lbs. smoked pork hocks, pork shank, or leftover ham bone 1 sm. carrot, grated, or sliced very thin 1 sm. onion 1 stalk celery 2 qt. precooked Great Northern beans Salt to taste In large pot, cover 2 or 3 pounds meat with water. Add 1 small onion, 1 stalk celery, 1 small carrot, grated or sliced very thin. cover and boil until meat comes off bones. Remove bone from liquid, cut into small pieces and return to pot. Add 2 quart jar precooked Great Northern beans. Salt to taste, no pepper, it spoils bean soup flavor. Heat thoroughly and it's ready to eat. Next day, add water, if necessary, heat and serve again. Deer hunting tradition. |
