LOW - FAT MASHED POTATOES 
2 lb. potatoes, peeled & cut into pieces
1 c. non-fat plain yogurt
1/4 c. green onion, minced
1 tbsp. butter

Place potatoes in boiling water and cook until tender (about 20 minutes); drain. In a bowl, combine potatoes, yogurt, and butter. Beat with electric mixer until fluffy. Mix in green onion; season with salt and pepper to taste. Serve hot. Servings: 6.

No gravy necessary!
