CHICKEN AND BROCCOLI OVER
LINGUINE
 
4 boneless, skinless chicken breasts, cut into bite size pieces
4 c. broccoli, cut into bite size pieces
2 tbsp. chopped garlic
1 c. olive oil
1 lb. linguine, cooked and drained
Salt to taste

In large frying pan, saute garlic in olive oil (do not brown the garlic). Add chicken pieces, stir and saute until almost cooked. Par-cook broccoli in microwave (approximately 2 minutes). Add broccoli to chicken, garlic and olive oil, saute. Mix in well and saute until cooked but still crunchy. Salt to taste.

Remove the chicken and broccoli from the pan and set aside. Mix the garlic and olive oil with the cooked, drained linguine. Pour the linguine, garlic and olive oil mixture onto large serving platter. Top with chicken and broccoli mixture. Serve immediately with hot Italian bread and side salad. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
