MICROWAVE BROWNIES | |
2 eggs 1 c. sugar 1/2 tsp. salt 1 tsp. vanilla 1/2 c. melted butter 1/2 c. cocoa 3/4 c. unsifted flour 1 c. chopped nuts 6 oz. chocolate chips (optional) 1 c. flaked coconut (optional) In a small bowl, beat eggs, sugar, salt, and vanilla until light and fluffy. Add melted butter and blend thoroughly. Mix in flour and cocoa at low speed. Stir in 1 cup nuts. Spread evenly in a greased 8 inch microwaveable pan. Microwave on high 6 to 7 minutes, rotating 1/4 turn every 2 minutes until brownies look dry but spring back to the touch. Cut when cool. You can add chocolate chips or coconut to batter, if desired. |
