NO-FRY FRIED RICE 
2 c. rice
1/4 c. oil
1 (1 oz.) pkg. onion soup mix
3 tbsp. soy sauce
1/2 green pepper, chopped
1/2 red pepper, chopped
8 oz. can sliced water chestnuts
1-2 stalks celery, sliced
10 oz. can sliced mushrooms
3 1/2 c. water

Mix all ingredients in a large casserole dish (more of the peppers may be used if desired). Cover well and bake at 350 degrees for 1 hour until all liquid is absorbed. Serves 8-10.
