REFRIGERATOR POTATO ROLLS 
Pkg. instant mashed potatoes (4 servings)
4 1/2-4 3/4 c. all-purpose flour
1 pkg. dry yeast
1/2 c. sugar
1 tsp. salt
1 c. milk
1/2 c. shortening
2 eggs

Prepare mashed potatoes according to package directions. In large mixer bowl, stir together 2 cups flour and yeast. In saucepan heat milk, shortening, sugar and salt just to warm. Stir in potatoes then add to dry flour mixture. Add eggs. Beat at low speed. By hand, stir in enough flour to make a soft dough. Place in greased bowl and refrigerate. When ready to cook, roll into rolls, place on bread pan. Let rise 45-60 minutes. Bake at 375 degrees for 25-30 minutes.
