LAUREN'S AUTHENTIC IRISH POTATO
PIE
 
2 large red potatoes
1/4 white onion
3 cups grated cheddar
1/2 cup milk
1 cup dairy sour cream
2 tbsp. butter
salt, pepper and paprika, to taste

Juliane slice the potatoes so that they are in 1 1/2 inches long, thin, french fry style slivers. Dice the white onion into small cubes.

In a casserole dish, butter the insides so that it wont stick, and in a separate bowl mix the salt, pepper, paprika, cheese, milk, sour cream and butter (unmelted).

Place the sliced potatoes and diced onions in the casserole dish, and mix the other ingredients in with them until they are mixed evenly, sprinkle extra cheese on top.

Cover and bake in 375°F oven for 45 minutes.

Serves 4.
