CHERRY CHEESE CAKES 
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
2 eggs
24 vanilla wafers
1 (21 oz.) can cherry pie filling
Cupcake baking cups

Put cupcake papers in muffin tins. Put 1 vanilla wafer in each, flat side up. Mix cream cheese, sugar, lemon juice, vanilla and eggs together until creamy. Put 1 tablespoon of mixture in each cup. Bake 15 minutes at 350 degrees. Remove from oven and let cool. Cover top of each cheese cake with 1 tablespoon pie filling and refrigerate.
