MIXED VEGETABLE CASSEROLE 
1 (16 oz.) frozen vegetables (broccoli, cauliflower, carrots)
1/2 c. mayonnaise
3/4 c. Velveeta cheese
1 sm. onion, chopped (optional)
1 can water chestnuts (optional)
18 crushed Ritz crackers
Few pats of butter

Cook veggies according to directions on package; drain. Mix mayonnaise, cheese and onion. Add to vegetables. Drain water chestnuts and add to vegetables. Pour into buttered baking dish. Top with crushed Ritz crackers and butter. Bake 30 minutes at 350 degrees.
