Peel and split large cucumbers. Remove seeds and cut into chunks (small chunks). Prepare enough to take up the following solution (approximately 12-15 large) : STEP I: 4 1/2 - 5 qts. water 1 c. pickling lime Mix well and add to cucumbers (use crock or stainless steel container). STEP II: Soak 24 hours. Next day, wash 3 times, drain, cover with ice and let stand 3 hours. STEP III: Boil together: 1 bottle red food coloring 1 tbsp. powdered alum Water (to cover cucumbers) Pour over cucumbers (add more water if needed). Simmer 1 hour then boil 3 minutes. Drain cucumbers well. Mix together and bring to a boil: 2 c. water 10 c. sugar 1 med. pkg. red hots 1 stick cinnamon Pour over cucumbers and let stand overnight. STEP IV: Next day, drain off syrup and heat to boiling. Pack cucumbers in jars and pour hot syrup over to cover. Seal. Process in water bath to insure a good seal, 5 to 10 minutes. Makes 8 pints. |
