RED COLESLAW 
3 c. finely shredded red cabbage
1 c. diced apples
2 tbsp. chopped onion
2 tbsp. lemon juice
3 tbsp. oil
1/2 tsp. salt
1/4 tsp. sugar
2 c. water

In a pot boil water. Add cabbage; cover. Let stand for 10-15 minutes; drain. In a small bowl blend lemon juice, oil, salt and sugar. In a medium bowl combine cabbage, apples and onions. Pour dressing over cabbage. Toss until well mixed. Chill. Serves 6.
