IMPOSSIBLE QUICHE (CRUSTLESS) 
12 slices (about 1/2 lb.) bacon, crisply cooked
1 c. (about 4 oz.) shredded Swiss cheese
1/3 c. finely chopped onion
2 c. milk
1/2 c. Bisquick baking mix
4 eggs (or use Eggbeaters)
1/4 tsp. salt
1/8 tsp. pepper

Heat oven to 350 degrees. Lightly grease 9 or 10-inch pie or quiche pan. Sprinkle bacon, cheese and onion evenly over bottom of pie plate. Place remaining ingredients in blender container. Cover and blend on high speed 1 minute. Pour into pie plate.

Bake until golden brown and knife inserted in center comes out clean, 50 to 55 minutes. Let stand 5 minutes before cutting. Refrigerate or freeze leftovers. Makes about 6 servings.
