APRICOT CHICKEN 
1 chicken, cut up
1 tsp. garlic powder
1/2 tsp. salt
Pepper to taste
3/4 c. apricot brandy
1/2 c. apricot preserves
1/4 c. water

Preheat oven to 375 degrees. Place chicken in covered casserole dish. Sprinkle with seasonings. Spoon preserves over chicken and pour brandy over chicken. Pour water in dish around chicken. Cover and cook in preheated oven for 1 to 1 1/4 hours, basting chicken with juices every 20 minutes. Uncover chicken for last 10 minutes of cooking time. Serve with juices poured over chicken.
