CARROT CAKE 
2 jars junior baby food carrots
1 1/2 c. Mazola oil
2 c. flour
2 tsp. cinnamon
1 tsp. salt
2 c. sugar
4 eggs
2 tsp. baking powder
2 tsp. baking soda
1 c. pecans, floured

Mix all ingredients. Bake in unfloured pan for 1 hour in 325 degree oven.

FROSTING:

1 c. powdered sugar
1 tsp. vanilla
8 oz. Philadelphia cream cheese
1/2 stick butter
