ZUCCHINI BARS | |
3 sm. zucchini 2/3 c. lemon juice 1 c. sugar 1/4 tsp. cinnamon & nutmeg CRUST MIX: 4 c. flour 2 c. sugar 1/2 tsp. salt 3 soft sticks butter Peel zucchini, remove seeds and slice thinly as for apple pie. Cook in lemon juice until tender (about 10-15 minutes after it boils). Do not overcook. Add sugar, nutmeg and cinnamon and simmer 2-3 minutes. Let cool. Add 1/2 crust mix to thicken and 1 teaspoon cinnamon. Combine ingredients for crust mix. Pat down 1/2 of the mix onto large ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Cool. Spread filing over crust. Cover with remaining crust mix. Bake at 350 degrees for 30 minutes. |
