IMPOSSIBLE PUMPKIN PIE 
3/4 c. sugar
1/2 c. Bisquick or Jiffy
2 tbsp. butter
1 can (13 oz.) evaporated milk
2 eggs
1 can (16 oz.) pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla

Heat oven to 350 degrees. Grease pans (9 x 1 1/4 or 10 x 1 1/2 inches). Beat all ingredients until smooth 1 minute in blender or high speed 2 minutes with hand mixer. Pour into plate (pan). Bake until knife inserted in center comes out clean, 50 to 55 minutes. High altitude - 375 degrees for 45 to 50 minutes.
