BAKED CREAMED POTATOES 
1/2 c. sliced green onions
1 stick butter
6 tbsp. flour
1 tsp. paprika
1/4 tsp. pepper
1 c. shredded cheddar cheese
1 green pepper, chopped
1/2 c. chopped pimiento
4 c. milk
1 tsp. salt
6 c. cubed, cooked potatoes
Paprika

Pan fry onion and green pepper in butter in large skillet about 2 minutes; stir in pimiento and flour. Add milk gradually; cook and stir until thickened. Add paprika, salt, pepper and potatoes; pour into a 3 quart casserole. Cover with cheese sprinkle paprika over top. Bake in a moderate oven, 350 degrees, for 30 to 40 minutes. Serve hot. Yield: 10 to 12 servings.

This recipe may be prepared early, then refrigerated for baking later. Great for buffets or potlucks.
