ZUCCHINI BREAD 
3/4 c. Crisco oil
2 c. sugar
3 eggs, beat well
2 1/2 - 3 c. grated zucchini
3 tsp. vanilla
3 c. sifted flour
2 tsp. salt
1/4 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1/2 - 2/3 c. nuts

Beat together first 3 ingredients. Mix in next 2 ingredients. Add remaining ingredients. Pour into 2 loaf pans. Bake for 1 hour at 350 degrees or until done.
