FRESH APPLE CAKE 
2 c. sugar
1/2 c. butter or shortening
1 tsp. cinnamon
1/2 c. pecans
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
4 grated apples

Cream shortening, sugar and eggs. Add flour mixed with baking powder, soda and salt. Fold in apples and pecans; spoon into bundt pan. Bake 1 hour at 350 degrees.

CARAMEL FROSTING:

1/2 c. butter
1 c. light brown sugar
2 c. powdered sugar
1/4 c. evaporated milk
1 tsp. vanilla

Mix butter, milk and sugar by hand. Cook over direct heat or microwave until bubbling. Add powdered sugar and vanilla. Mix well. Pour over cooled cake.

Since microwave ovens vary in power, you may need to adjust your cooking time.
