MUSHROOM MEAT LOAF 
2 c. bread crumbs
2/3 c. chopped onion
1 (8 oz.) can mushroom pieces, drained
2 tsp. salt
1/4 tsp. pepper
1/2 c. milk
2 eggs
1 lb. ground chuck
1/2 lb. ground, lean pork
1/2 lb. ground veal

Or 2 pounds ground beef.

Heat oven to 350 degrees.

Thoroughly mix bread crumbs, onion, mushrooms, salt, pepper and milk. Add eggs and mix well. Gently mix 1/4 of the meat at a time until the whole mixture is thoroughly combined.

Place meat mixture in a 9 x 5 x 3 inch loaf pan. Bake, uncovered, for a hour and 20 minutes to 1 hour and 30 minutes. Pour off excess fat and juices. For easy slicing, let meat loaf stand about 10 minutes before serving. Makes 8 servings.
