NO SUGAR CARROT COOKIES 
1/2 c. butter
1 tbsp. brown sugar substitute
1 tbsp. white sugar substitute
1 egg
2 tbsp. water
1 tsp. vanilla
1 c. mashed, cooked carrots
2 c. flour
1/2 tsp. salt
2 tsp. baking powder

Cream together butter and sugar substitutes. Add egg, water, and vanilla, beating until light and fluffy. Beat in mashed carrots. Combine flour, salt, and baking powder and sift into carrot mixture. Stir to blend completely. Drop by teaspoonfuls onto lightly greased cookie sheets. Bake at 375 degrees for 10-12 minutes. Makes 4 dozen cookies.

Cookies may be done in microwave. Place 6-8 cookies on waxed paper. Cook on low for 3-4 minutes or until tops are set. Repeat for baking rest. 1 cookie, 35 calories.

Since microwave ovens vary in power, you may need to adjust your cooking time.
