CHEESE STUFFED MEAT LOAF 
2 lbs. ground beef
2 eggs
1/2 c. bread crumbs
1 c. tomato juice
1/2 tsp. salt
1 tsp. oregano
1/4 tsp. pepper
1 lg. onion, minced
Butter
6 slices cooked ham
1/2 c. Mozzarella cheese, grated

Combine beef, eggs, bread crumbs, tomato juice, salt, oregano, and pepper. Saute onion in a little butter until golden brown. Add onion to meat mixture and mix well. Turn meat out on a sheet of foil or wax paper. Flatten meat into oblong shape about 3/4 inch thick. Place ham on meat, keeping it about 1 inch from edge. Sprinkle Mozzarella cheese on ham. Roll meat up as for a jelly roll. Press meat on sides and top to seal all openings. Turn loaf from foil into a greased loaf pan. Bake at 325 degrees for 60 to 75 minutes. Serves 6 to 8.
