CHINESE CHICKEN SALAD 
SALAD:

1/2 head lettuce
1 can water chestnuts, sliced
1/4 lb. fresh mushrooms, sliced
4 green onions
1/2 c. peanuts or sliced almonds
1/2 c. chow mein noodles
3 chicken breasts, cooked and cubed
1/2 lb. broccoli

DRESSING:

1 tsp. dry mustard
1/4 c. sugar
1 tbsp. soy sauce
1/3 c. rice vinegar
2 tbsp. sesame seeds, roasted
1/4 c. salad oil

Combine dressing ingredients and mix well. Marinate chicken in dressing for 1 hour. Wash vegetables and cut into bite-size pieces. Pour dressing over salad, toss in chow mein noodles and serve immediately.
