RHUBARB PIE 
2 1/2 to 3 c. diced rhubarb
2 c. sugar
1 pkg. (3 oz.) strawberry gelatin
1 tbsp. cornstarch
1 egg, slightly beaten
Pastry for a 2 crust pie

Mix all ingredients together; let stand while making pastry. Line 9 inch pan with bottom crust. Mix filling again; pour into unbaked shell. Cover with top crust. Bake at 425 degrees 10 to 15 minutes, then 375 degrees for 25 minutes.
