MANDARIN ORANGE MUFFINS | |
2 c. flour 2/3 c. sugar (can use 2/3 c. Sprinkle Sweet) 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1/3.c shortening 1/2 c. flaked coconut or 3 tbsp. Kitchen Klatter coconut flavoring 1 (11 oz.) can mandarin oranges, drain & reserve liquid 1/2 c. reserved mandarin orange juice 1/2 c. plain yogurt 1 egg, beaten In a large bowl combine flour, sugar, baking powder, baking soda and salt. Cut in shortening until coarse crumbs are made. Stir in coconut, and orange segments. In a small bowl combine orange juice, yogurt and egg; blend well. Add yogurt mixture to dry ingredients. Stir until just moist. Grease or line muffin tins. Bake at 350 degrees for 20 minutes. Makes 16 muffins. |
