ORANGE SOUR CREAM MUFFINS 
6 tbsp. softened butter
1 c. sugar
1 egg
1/2 c. sour cream
2 tbsp. + 2 tsp. orange juice
2 tbsp. grated orange rind
1/2 tsp. orange extract
1 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped pecans

Cream butter and sugar. Beat in egg. Fold in sour cream, orange juice, rind and extract. Sift dry ingredients, add to orange mixture, blending well. stir in pecans. Fill greased muffin pans 1/2 - 3/4 full. Bake 375 degrees for 12 minutes.
