2 tbsp. vegetable oil
1 lg. onion, chopped
6 c. unsalted chicken broth
3 cloves garlic, minced
1/2 tsp. thyme leaves
1/4 tsp. pepper
1/4 c. chopped parsley
3 carrots, thinly sliced
1/2 c. alphabet macaroni
1 sm. zucchini, chopped
1 tomato, chopped
3 c. diced cooked chicken

Heat oil in soup pot. Add onion and cook until browned. Add broth, garlic, thyme, pepper and parsley. Bring to boil, cover and simmer 15 minutes. Stir in carrots and macaroni; simmer uncovered until both are tender. Stir in zucchini, tomato and chicken; heat until steaming. 4 servings.
