BEAN STUFFED GREEN PEPPERS | |
6 med. green peppers 10 c. water 1 (31 oz.) can pork and beans 8-10 frankfurters, cut into rounds 1/2 c. catsup 2 tbsp. firmly packed brown sugar 2 tsp. instant minced onion 2 tsp. prepared mustard 6 slices American cheese, cut in half diagonally Heat oven to 350 degrees. Cut green peppers in half lengthwise; remove seeds and membranes. In 4 quart Dutch oven, bring water to a boil; add peppers. Simmer 5 minutes; drain. In two 11 x 7 inch glass baking dishes, arrange peppers cut side up. Combine remaining ingredients except cheese. Fill each half pepper with about 1/2 cup bean mixture. Bake 20 minutes. Top each pepper with cheese; continue baking 2-3 minutes or until cheese is melted. Makes 12 servings. |
