BRAN MUFFINS 
1 c. sour cream
1 c. bran
1/4 c. frozen orange juice concentrate or juice and rind of 1 orange
1/2 c. oil
1 c. brown sugar
2 eggs
1 1/2 c. flour
1/2 tsp. salt
2 tsp. baking soda
1/2 c. raisins or dates (optional)

Soak sour cream and bran. Mix together orange juice, oil, brown sugar, and eggs. Add flour, salt and baking soda alternately with bran mixture and liquid mixture. Bake at 375 degrees for 25-30 minutes.
