BOERENKOOL - DUTCH WINTER DISH | |
3 lbs. kale, curly 2 1/2 lbs. potatoes 1/2-1 pt. milk 1/2 lb. butter 1 1/2 lbs. beef sausage, sweet Salt and pepper to taste Wash kale and cook for 45 minutes in boiling water. Drain and cool. Chop fine. Peel and cut potatoes into quarters and cook in boiling salted water for 12-15 minutes. Drain. Mix butter and milk together and heat. Mix the potatoes and kale together; add the butter and milk mixture until desired consistency is attained. Heat sausage with potatoes for 6-8 minutes. Cut sausage into pieces and place on top of Boerenkool. Serve hot with rolls. Serves: 8. (Prep and Cooking Time: 1 hour) |
