CHEESY-POTATO MEAT PIE 
1 1/2 lb. lean ground beef
6 tbsp. fine dry bread crumbs
3 tbsp. finely grated onion
Salt and pepper to taste
3/4 c. evaporated milk
3 c. mashed potatoes
3 tbsp. chopped pimento
3 tbsp. chopped green pepper
1 c. (4 oz.) shredded Cheddar cheese

Combine ground beef, bread crumbs, onion, salt, pepper and evaporated milk just until blended. Press firmly into 9 inch pie plate.

Bake in preheated 350 degree oven for 35 to 40 minutes. Spoon off drippings. Combine mashed potatoes, pimento, green pepper and 3/4 cup of the cheese. Frost meat pie with potato mixture; top with remaining 1/4 cup cheese. Bake 10 additional minutes. Yield: 6 servings.
