BUTTERNUT CHERRY CAKE | |
2 sticks butter 1/2 c. Crisco 3 c. sugar 1/4 tsp. salt 5 lg. eggs () 3 c. flour 1 c. milk 2 1/2 tbsp. vanilla butter flavoring 1/2 c. maraschino cherries, well drained, chopped 1/2 c. nuts, chopped Cream butter, shortening, sugar and salt; add one egg at a time and beat well. Add flour and milk alternating. Add flavoring, nuts and cherries stirring by hand. Place in COOL oven and bake at 325 degrees in greased and flour pans for: 1 hour 45 minutes in tube pan; 1 hour 30 minutes in 2 bread loaf pans (testing often); 1 hour for 8 mini loaf pans (testing often). Remove from pan immediately. Can use egg substitute equivalent to 5 eggs. This makes a great holiday cake for gift giving! Mix the maraschino cherries using half red and half green during the Christmas season. |
