FLAN DE QUESO 
5 lg. eggs, slightly beaten
10 oz. can evaporated milk
1 tsp. vanilla
1 c. sugar
8 oz. pkg. cream cheese

To Prepare Mold: Mix 3/4 cup sugar and 1/3 cup water in 9 inch baking mold. Cook on high heat, stirring occasionally, until sugar caramelizes (about 5 to 7 minutes). Evenly coat the bottom of the mold by shifting side to side. Let cool.

Mashed cream cheese until is soft and creamy. Add evaporated milk, vanilla and sugar. Mix well. Add eggs and mix well. Pour into prepared caramel mold. Place mold in a pan of lukewarm water, until 2/3 submerged. Bake for 1 hour in preheated oven at 350 degrees, until toothpick inserted in the middle comes out clean. Remove from water. Cool several hours.
