COCONUT BREAD 
3 c. flour
1 c. sugar
4 tsp. baking powder
1 tsp. salt
1 (3 1/2 oz.) can coconut, toasted
2 tsp. orange peel
1 egg, slightly beaten
1 1/2 c. milk
2 tbsp. cooking oil
1 tsp. vanilla

Toast coconut. Mix first four ingredients, stir in coconut and orange peel. Combine the rest of the ingredients and then add to dry ingredients. Stir well until just moistened. Pour into large loaf pan or two small pans. Bake at 350 degrees for 35 to 45 minutes.
