BURIED TREASURE MUFFINS 
1 c. milk
2 c. flour
1/4 c. vegetable oil
1/4 c. sugar
1 egg, slightly beaten
1/3 c. jam or jelly
3 tsp. baking powder
1 tsp. salt

In a medium bowl mix milk, oil and egg together. Add the rest of the ingredients except the jam and stir just to moisten. (The batter will be lumpy.) Grease 12 muffin cups or line them with paper baking cups. Fill each cup 1/3 full. Drop 1 teaspoon of jam or jelly on top. Add more batter to make each cup 2/3 full. Bake at 400 degrees for 20 minutes or until golden brown. (This recipe tastes best served warm.) Yield: 12 muffins.
