BROCCOLI WITH TOMATOES AND
PEPPERS
 
1 bunch of broccoli
4 strips bacon
1 tsp. butter
1 lg. onion, cut in rings
1 c. chopped celery
2 green peppers, cut in rings
1 tsp. Tabasco sauce
1/2 tsp. garlic salt
Salt and pepper
3 tomatoes, sliced

Cut broccoli into small pieces. Boil the stems for 10 minutes. Boil tops for 5 minutes. Drain. Fry bacon crisp. Remove from pan. Add butter to bacon fat, then saute onion, celery and green pepper. Add all seasonings, saute 10 to 15 minutes more. Add sliced tomatoes. Simmer 15 minutes. Pour over broccoli. Serves 4-5. Don't over cook the broccoli - it should be firm.
