COCONUT PIE 
6 eggs, separated
2 1/4 c. sugar
3/8 c. flour
pinch of salt
1 1/2 c. milk
2 (8 oz.) glasses water
1 tsp. vanilla
2 c. coconut

Place egg yolks into 2 three-quart cooking pans. Beat yolks well. Add sugar, flour and salt. Mix again. Add milk, water, vanilla and coconut. Mix again. Place on heat and cook until mixture becomes thick. Stir constantly to prevent scorching. Pour into pie shells. This recipe makes 2 large pies.
