CHEESE BISCUITS 
2 1/4 c. Bisquick baking mix
2/3 c. milk
1/2 c. shredded Cheddar, Swiss or Monterey Jack cheese

Mix all ingredients until dough forms; beat 30 seconds. If dough is too sticky, gradually stir in enough baking mix (up to 1/4 cup) to make dough easy to handle.

Turn dough onto surface well dusted with baking mix; gently roll in baking mix to coat. Shape into ball; knead 10 times. Roll 1/2 inch thick. Cut with 2 inch cutter dipped in baking mix.

Bake on greased cookie sheet until golden brown, 8 to 10 minutes. About 14 biscuits.

Drop Cheese Biscuits: After beating, drop dough by rounded spoonfuls onto greased cookie sheet. Bake until golden brown, 10 to 12 minutes. Carefully loosen from cookie sheet.
