SPINACH SALAD WITH ZESTY LEMON
MUSTARD DRESSING
 
1 egg, slightly beaten
1/4 c. salad oil
Juice of 1 fresh lemon
2 tbsp. Dijon mustard
1 tbsp. grated Parmesan cheese
1 tsp. sugar
1 tsp. Worcestershire sauce
1/2 tsp. salt
Generous dash pepper
2 bunches or lg. pkg. fresh spinach, torn in bite-size pieces
1/4 lb. mushrooms, sliced
6 slices bacon, cooked, crumbled

Combine first 9 ingredients. Pour over cut spinach. Garnish with mushrooms and crumbled bacon. Serves 6-8.
