15 BEAN SOUP | |
2 qt. water 1 qt. chicken stock 2 tsp. salt 1/2 tsp. pepper 1 meaty ham bone (3/4 - 1 lb.) Banquet Garni Bag (you can make this) 1 (28 oz.) can whole tomatoes & juice 2 c. onions, chopped 2 c. celery, chopped with leaves 2 cloves garlic, minced 6 oz. zesty smoked sausage in casing 8 oz. chicken breast, uncooked, whole thing (skin & bone) Sort and wash the beans. Place in 2 quart water, soak 2 hours. Add chicken stock, salt, pepper, ham hock, spice bag. Bring to boil, reduce to medium low, cover and cook 2 1/2 to 3 hours, stirring occasionally. Add tomatoes, onion, celery and garlic. Bring to boil. Reduce to medium low with lid cracked slightly. Cook 1 1/2 hours, stirring occasionally. Add sausage and chicken. Bring to boil, reduce to medium low. Cook, covered 1 to 1 1/2 hours, stirring every 15 minutes. Should start to thicken slowly. Remove ham hock, chicken breast and spice bag. Discard bones and fat. Dice meats and return to the soup. Cool and refrigerate. BOUQUET GARNI BAG: 1/4 teaspoon each of marjoram, thyme, red pepper, dill weed, garlic powder, lemon pepper, onion salt, celery salt. |
