KOLACHES 
1/2 c. sugar
1 tbsp. salt
1/2 c. melted shortening
3 egg yolks
1 whole egg, beaten
3 env. yeast
5 to 6 c. flour
2 c. milk

Dissolve yeast and 1 tablespoon sugar in 1/2 cup lukewarm water and set aside. Scald milk and let cool to lukewarm, then add sugar, salt, shortening and eggs. Mix well and beat in 3 cups of flour. Add yeast mixture and mix well. Then add enough flour to make a soft dough. Cover and let rise until double, about 1 to 1 1/2 hours. Make balls of dough and put on greased cookie sheet. Let rise again, about 45 minutes. Push centers down and fill with filling of your choice. Let rise about 15 minutes.

Bake at 400 degrees until brown, 12 to 15 minutes. Butter when taken from oven. Place on rack to cool. Prune, apricot, cherry, and poppy seed fillings are popular.
