PEAR MINCEMEAT 
7 lbs. ripe bartlet or sand pears
1 lemon
2 lbs. seedless raisins
6 3/4 c. sugar
1 tbsp. cloves
1 tbsp. cinnamon
1 tbsp. nutmeg
1 tbsp. allspice
1 tsp. ginger
1 c. vinegar

Pare and quarter pears. Cut lemon into quarters, removing seeds. Put pears, lemon and raisins through food chopper. Combine remaining ingredients in a large pot. Add chopped fruit mixture. Bring to a boil over medium heat; simmer 40 minutes. Pour boiling water into hot pint jars, leaving 1/4" head space. Adjust caps. Process 25 minutes in boiling water bath. Yield: about 9 pints.
