MOM'S (LYNNE MC ELDERRY) - BEST
EVER CHICKEN PIE
 
1/3 c. butter
1/3 c. flour
1 c. onions, chopped
1 cooked chicken, boned and skinned
3 c. chicken broth
1 tsp. salt
Pepper to taste
2 cans mushrooms, drained
1 can peas, drained

In large skillet melt butter, add onions, and cook until transparent. Add flour until browned. Add broth and seasonings. Stir well. Add everything else.

Pour into 10 x 10 or 9 x 12 baking dish. Top with pastry of your choice. (Puff pastry adds a nice touch.) Bake until bubbly and pastry is done.
