CAULIFLOWER MORNAY 
1 head cauliflower
1 1/2 c. med. rich cream sauce
1 c. grated Cheddar cheese
2/3 c. buttered bread crumbs

Wash cauliflower and break into flowerets (cut away leaves and heavy stems). Steam in 1 inch boiling salted water until crispy-tender. Drain thoroughly.

Transfer cauliflower to shallow baking dish. Cover with 1/2 cup cheese, sauce, then rest of cheese. Top with bread crumbs. Heat at 350 degrees until hot and bubbly.

TO MAKE CREAM SAUCE:

3 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
3/4 c. milk
3/4 c. light cream

Melt butter; whisk in flour and salt, then add milk and cream. Cook until thick.
