30 GALLON CHOWDER 
40 lb. beef
32 chicken legs & thighs
3 gallons tomato juice
1 c. salt
6 gallons potatoes
3 gallons onions
2 gallons whole kernel corn
3 tsp. black pepper

7:00 am: Put beef and chicken covered with boiling water in kettle and cook.

9:30 am: Add potatoes and onion, cook until 11:30.

11:30 am: Add corn and tomatoes, cook until 12:00. If whole tomatoes are used instead of tomato juice, add about 1/2 hour earlier. Chowder will be thick.
